In 1972 when the two guys who started Starbucks wanted to know how to run a coffee company, where did
they go? About 150 miles south of Seattle to the home of Boyd Coffee Company.
Today, 108 years after its inception, Boyd Coffee Company is still out in front as the
industry’s leading innovator of specialty coffees and related equipment for restaurants
and other foodservice operations west of the Mississippi and abroad. At the 2008
National Restaurant Association’s annual trade show, Boyd Coffee Company introduced a
revolutionary brewing machine called The Coffee Profiler®. As evidence of the
ground-breaking nature of this piece of equipment, the Specialty Coffee Association of America (SCAA)
automatically grants Golden Cup Award certification – the coffee industry’s standard
for recognizing excellence in properly brewed coffee – to any purveyor that has
The Coffee Profiler®.
“We have thoroughly tested The Coffee Profiler® from Boyds, have closely evaluated the coffee it brews, and we've found that it consistently produces a cup of coffee that exceeds our Golden Cup Award standards,” said Joseph Rivera, Director of Science and Technology for the SCAA.
In the past, food service operators who wanted to apply for Golden Cup Award status had to send in samples of the brewed coffee and undergo an on-site evaluation by an SCAA Certified Brewing Technician. Now, as Rivera explained, it's as simple as “If you have The Coffee Profiler® from Boyds, then you've met the SCAA's Golden Cup Award standard.”
“We work very closely with our customers to educate them about proper brewing techniques before we install The Coffee Profiler®,” said Katy Boyd Dutt, Director of Marketing. “This is a truly a partnership between Boyds, our customers and the SCAA.”
The Coffee Profiler® was the first coffee brewing system to score more than a 90 percent uniformity of extraction rating by the SCAA - its 91.3 rating eclipsed the previous highest score ever of 85.6. Boyd Coffee Company is not new to operating in the rarified air of coffee firsts: Boyds introduced the world to the Airpot brewing system, they pioneered the first use of paper coffee filters in restaurant coffee makers, and were the first company to loan brewing equipment to foodservice clients.
“We're very proud of all of our achievements in our 108-year history, but what The Coffee Profiler® means to the foodservice industry by far surpasses any of our past innovations,” said David Boyd, who with his brother Dick makes up the third generation of Boyd Coffee Company leadership. “What the Profiler does is totally eliminate the guesswork from making the perfect cup of coffee every single time.”
While The Coffee Profiler® can brew up to 250 different coffee profiles (or recipes), operation of the high-tech device is as simple as pushing a button. Initially available only to Boyd Coffee Company customers west of the Mississippi River, The Coffee Profiler® is pre-programmed by a Boyds technician, guaranteeing quality in every cup of coffee by controlling all aspects of the brewing process including water contact time, temperature, formula, volume, dilution and bypass. The machine offers simple, push-button operation, not only for hot coffee drinks, but for iced coffee as well as hot and iced tea.
“We know that restaurant counter space is at a premium, so The Coffee Profiler® has a small footprint and it can brew your specialty, gourmet, decaf, iced tea or iced coffee drinks in several different sized containers - with the promise of producing the finest cup possible each and every time,” said Mike Johnson, the R & D Manager for Boyd Coffee Company who spent five years overseeing the research and development of the equipment. It's sort of like your smart phone - only smarter. The Coffee Profiler® senses elevation while providing automatic temperature adjustment. It also monitors the actual water usage and tells you when to change water conditioners.”
Golden Cup Award Standards were developed by the Coffee Brewing Center of the Pan-American Coffee Bureau in the 1940s to create a standard of coffee brewing excellence in the foodservice industry. Since being adopted by the SCAA and the Specialty Coffee Association of Europe (SCAE), it serves as the industry-wide standard of excellence.
